Junk Food Binge

My eyes are very dry today, which makes it hard to see. It's a problem I've had for years. I've been using my eye drops 4 or 5 times a day or more lately. I put them in as soon as I get up in the morning. I feels great, but doesn't seem to help much. Today everything is blurry, which is annoying when I try to do anything on the computer, one reason, I haven't felt much like blogging. I just hope that the pictures are clear, they don't look that way to me.

A nice cold smoothie was what I wanted this morning. I'm still not burnt out on them . I may feel differently when winter comes again. I had another pineapple smoothie today. I always feel full 20 minutes after I've drank on, but while I'm drinking it I feel like having 2 of them, but I know better. They go down quick, great if you're in a hurry.

Today was a laid back quiet day. I did some cleaning & laundry, but was sort of lazy otherwise. That's how I feel when my eyes are being difficult. It was hot outside and someone was burning something somewhere. It was smoky outside. I could smell it inside the house. I let the dogs stay inside most of the day.

I was a lazy about food also. I ate a lot of junk today, just snacking the day away more or less. I had strawberry pretzel mess dessert for a snack. It tastes great, but it's not much to look at. Taste is the main thing though. It doesn't matter how pretty it is, if it doesn't taste good.


 I had a dab of leftovers for lunch, some mac & cheese with pea salad sprinkled with a little fresh ground pepper.


I had a few handfuls of this snack mix that Mom gave me. It has dried cranberries, pecans, cashews, & pistachios. 

  
I had a bowl of cucumber and tomato slices drizzled with sun dried tomato vinaigrette. I still have several Roma tomatoes in my vegetable drawer.

I thought about adding a little onion, but like I said, I was sorta of lazy, so I didn't bother.

It was hot this evening, there was nothing on tv, I was bored and I gave in to my junk food craving and had a bowl of Breyer's Coffee Fudge Brownie ice cream. 

I do this sometimes, that is I have days when i just snack or eat junk. I try not to do this too often. I usually limit myself to one junk food treat a day, but there are days when I eat junk all day long. I also try to eat healthy snacks, sweets are the worst. They are my downfall.
Now that I'm done, I think I will grab my bottle of eye drops and get ready for bed. It's way late and tomorrow is Zumba day.

So This Is Sunday

Just the facts....Updated

Well I realized it was Sunday.....about halfway through the day and only because DH ask if I was ready to go and I had no idea where we were going. Ooops!

I gotten up thinking Sunday was Monday. Wondered why DH was home, but never ask, wondered why someone had posted about going to church on FB, but never made the connection. I don't know where my brain was, but apparently it wasn't in my head.

Once I found out it was in fact Sunday, I quickly got myself together and headed to Mom's, late of course, but thanks to Lynda, I still got pics of the food. We had a good dinner. I still felt sort of out of it all day. I don't know what my problem was, but hopefully I am over it.

I got a few shots of the kids playing in the water. It was a hot day and they really enjoyed it. I was very tired when we got home so I just did a rushed post. I decided to wait and update you today.

Short & Sweet

This is kinda sorta how my day went. I got up, let the dogs out, etc. and fixed my breakfast. I already knew what I was having. I am always thinking of my next meal, lol, especially when it comes to breakfast. That's because, I usually have dinner between 6-8pm depending on what's going on. I don't usually snack after dinner and I'm not an early riser, so by the time I get up, I am really, really, really, hungry. Being up until the wee hours of the morning, looking at food photos & talking about food, doesn't not make it any easier. When it comes time for breakfast, I'm eatin' and nothing is safe, except meat.

I didn't have a lot to choose from this morning for a smoothie, but I had enough to fix one and that was all that mattered. I made an Apple Crisp Smoothie. I still haven't gotten any ground flax and this morning I subbed peanut butter for the walnuts, not because I was out, but just because that's what I was in the mood for.

OMG.....this was soooo good. I wasn't sure if it would be or not, but it was a real treat and I may be doing it this way from now on. If you love peanut butter with apples, you have got to try it this way. I want to do some juice smoothies or some with a mixture of fruits and veggies, but I think I will have to wait until I am burnt out on the ones with yogurt & milk first. Warning: It may take a while to get burnt out on the smoothies I've been fixing.

Oopps, I said this was going to be short. Oh well, I told you, I have never been speechless. I guess it's just not possible for me. I did have good intentions. I'll just have to see if I can make the rest short.

I did a lot of snacking today, more or less. We went to Mom's, so that Dale could patch the wall in the bathroom they are redecorating. I ate plenty but I didn't eat very healthy. I more or less just snacked the day away. This is what I had.

Pea Salad (Before Mom put everything in it)

Fresh Strawberries. One of the ingredients in one of tomorrows desserts. I had a great big sweet strawberry, while coffee was making.

A big dark chocolate cake to go with coffee, topped with salty pecans. Mmm...

(Ooops sidetracked again. Back to business.)

Oh and I unintentionally cut a LARGE slice. It was really yummy, but I'm talking major sugar rush. Next time I'll be sure to do a smaller slice. Luckily the coffee was decaf.

Also had a little duck sauce with theses.

Transforming Leftovers

This morning, my first thought after waking was of course, what's for breakfast. I was out of vanilla yogurt. My choices were lemon or pineapple. Fruit choices were pineapple or gala apple, so of course I chose pineapple in both cases. I could've sworn I'd already done a Pineapple Smoothie, but I hadn't. There was Berry Banana Pineapple, Black Cherry Pineapple, Orange Pineapple, Pineapple Orange Banana, and Strawberry Pineapple, but not plain pineapple. You can understand my confusion. That's a lot of pineapple.

I did use chopped walnuts in this one, but only because I was out of ground flax.

 
 I was craving a salty snack today so I had a cup of peas, PeaCrisps that is. I love these.


I still had tomato soup in the fridge which I needed to eat, but I decide to change it up a little. I threw in some taco seasoning and had it with a grilled cheese sandwich. This is a great way to revamp some leftover tomato soup.


We made a quick trip to the grocery store this afternoon. I picked up some more vanilla yogurt and also some Breyers 1/2 Fat Coffee Fudge Brownie. This is really good. I love their 1/2 fat ice cream. I don't miss the fat at all. The only thing wrong with it, was that there wasn't enough in the bowl.

I've also tried their, vanilla bean & chocolate chocolate chip, which are awesome and I'd also love to try the butter pecan & the dark chocolate velvet. I love all kinds of ice cream and frozen yogurt, but I guess my favorite would be vanilla, simply because you can do your own thing with it. Everything goes with vanilla. What's your favorite frozen dessert? 
We also had a huge storm hit, while we were in the grocery store. There was hail that was the size of nickels in piles everywhere. It looked like it had snowed. Everyones yards where white. I almost slipped on the ice getting into the car. I couldn't believe there weren't any dents in the car. Luckily it was mostly over when we left the store. It was still raining pretty heavy, but the storm had basically passed.

I had soup again for dinner, can you tell? I used some more of my tomato soup to make pasta sauce to go with my penne pasta . I added some mushrooms, sun dried tomatoes, and black olives and seasoned it all with oregano, garlic, marjoram, and thyme, then I sprinkled some Parmesan cheese over it. 
 I fixed one serving of the paste. I'm not sure about the sauce, but the two together were very filling and I couldn't eat the last couple of bites. I love when I can transform my leftovers. It makes eating the same thing, several times, less boring.
That was my day, not much excitement except for the storms, but I can do without that kind. Now, I'm off to stretch and close my eyes, but I shall return. Happy Saturday!!

Pineapple Smoothie Recipe

This is my Pineapple smoothie, cool, sweet, and yummy. I used canned pineapple for this one, but fresh would be even better. I like oatmeal in my smoothies because I usually have them for breakfast and I want a smoothie that stays with me, so that I'm not starved, an hour after I drink it. I suppose you could leave it out if you're just having it as a snack.

 Ingredients
3/4 C. Canned Pineapple Chunks
1 Single Serving Pineapple Chobani Greek Yogurt 0% or 1/2 C. Pineapple or Vanilla Yogurt
1/2 C. Milk 2%
1/4 C. Old Fashioned Oats
1 Tbsp. Chopped Walnuts (I would have used 2 tsp. Ground Flax instead, but I was out)
1/2 tsp. Vanilla Extract
3-4 Ice Cubes

Directions
Throw everything in your blender and blend until smooth. Enjoy!!

You may add a little honey or raw sugar for a sweeter smoothie, but I think this one is fine without it. I also use a hand blender in a large cup which works great.
