Pancake Breakfast

It's been a pretty quiet Sunday. I woke up to the sound of rain and Dolly squealing (it's her way of letting me know she needs to go out). She use to bark, now she just squeals. I like barking better. I needed coffee this morning, but still made mostly decaf. I also made pancakes. It's not often I get up in the mood to cook, especially when I haven't had a lot of sleep. Coffee & pancakes, it was a miracle.

I had peanut butter and lite syrup on my pancakes, great with coffee.

Just a little peanut butter and not much syrup, but I did have another small pancake after these two, then I regretted it soon after eating it. I also had another cup of coffee. DH & Lucas helped eat some of the pancakes. I made quite a few.

I had leftover mac & cheese with tomatoes for lunch. I added extra cheese plus a little milk to the macaroni to kick it up a little. It was a good lunch, but I should have drained the tomatoes some.

I found a way of eating the Philadelphia Dark Chocolate Indulgence that was really good. I had it with the strawberries from the garden on vanilla wafers. I also had a couple more wafers with just the chocolate. It's better with strawberries. 

I had a delicious mess for dinner, a nacho grande salad of shredded iceberg, chopped green pepper & onion, rice seasoned with cumin, chili powder, & paprika, spicy Doritos, vegetarian refried beans, cheese sauce, sour cream and salsa. I used Doritos because when Lucas & Dale went out for the stuff to make nachos, they forgot to get tortilla chips. Luckily we had a few chips left, plus some flour tortillas, and a small bag of Doritos. I chose the Doritos. I also need to mix up some more taco seasoning.

The boys picked up more raisins for me. I didn't realize until I got this big container that raisins are suppose to be kept in the fridge. 25 years, I've kept them in a jar or container in the cabinet. Mine don't last long enough to spoil, I guess, but I'll keep them in the fridge from now on. Who knew?

I've stayed up long enough, even if I did have a nap this evening before dinner. I'm thinking I have an early day tomorrow. Have a great night/day!!!

Cooking Country Style

After a decent night's sleep, I got up to gloom. It was rainy and so dark out I had to turn on the lights. It doesn't help that the house is surrounded by trees. It's hard for me to get started when it looks like the day is ending. I had a lazy breakfast, a bowl of strawberry dump cake. I hadn't planned to eat anymore of it. I assumed the guy would have eaten it all sooner. Lucas ate the last of it this evening though, so none will be going to waste.

Still having trouble getting starting, I made a pot of coffee, mostly decaf, but enough caffeine for a slight boost. This was actually my second cup. I needed the bit of caffeine to get my brain going apparently. After my coffee kicked in, I worked on my kitchen most of the day, trying to get ahead and clear some clutter.

I had a late lunch, so I just had the last slice of leftover pizza, the Pacific Veggie. I sprinkled it with a little Parmesan and some red pepper flakes.

I also had a cup of whipped strawberry yogurt and a couple of handfuls of raisins.

After cleaning up my kitchen I decided to make a big mess in it for dinner, lol. Yes, I cooked. I was in the mood for my version of country cooking. First off, I made a big pan of cornbread. It was an off day for cornbread apparently. I was very surprise when my cornbread didn't rise as much as normal and even more surprised when it stuck to the pan. My cornbread never sticks. I don't think I've had cornbread stick in years. It was not bad, but I will be re-seasoning my cornbread pan. I can't be having sticky cornbread.

To go with my cornbread, I made cooked cabbage with butter sea salt and fresh cracked pepper. I also fried some red skinned potatoes, skin on of course, with the salt and pepper seasoning. The pinto beans were from a can. I did add a little butter and some chopped onion. No other seasoning was needed. 

It was a very filling meal, but it was good and not one thing was fixed in the microwave. Go me!!!. 

A little later, I had a cup of peppermint cocoa with a few peppermint mini marshmallows on top. I thought I'd try and drink some, since it's sort of chilly with the rainy weather we're having. 

I've stayed up late again. Even though I'd had plans to finish up early. My computer has been working against me for the past few days. I'm not sure if the internet is that slow or if it's the computer itself. I've scanned and done everything I know to do to speed it up, but it's just not working. I'm a multi-tasker and my computer is not. Now for some Zzz's. Have a great night/day!!!

Millville GetBalance Chewy Granola Bar Review

Starting to look a little overcast this morning thanks to Irene, I suppose, of course we're far enough off shore that it's not forecast that we will be effected, thank goodness. We do have friends and family on the coast though and we hope that the storm leaves them safe, with at the most, minimal damage. Prayers are with everyone who will be effected by Irene.

Now about yesterday, breakfast was not a Banana Pudding smoothie. It was a smoothie and there was a little banana in it, but it was more or less a Tropical smoothie with pineapple and shredded coconut which I threw in the grinder along with my oats and ground flax. I don't mind a little texture, but I do like my smoothies as smooth as possible.



For lunch I had the last of my tomato soup. I also fished an Asiago cheese bagel out of the freezer which I defrosted spread with butter, garlic and Parmesan cheese, then I stuck it under the broiler for a few minutes.

The bagel toasted up nicely. I love that Panera's Asiago cheese bagels don't have the hole in the middle. I sort of wish they all came that way.

My honey and cinnamon came in a cup of peach mango green tea yesterday. I needed a little pick me up as well. I love that the green tea only has 15mg of caffeine per serving. I've also cut back to 1 tea bag per large cup of tea. It's just a good and my tea goes farther.

Yesterday afternoon we went to Aldi's. One of the things I got was Millville GetBalance Chewy Granola Bars. There were several choices of granola and cereal bars, but I preferred the nutrition and ingredients of this one. I bought the Trail Mix bars, having as you can see, almonds, cranberries, & raisins. With only 130 calories per bar, they make a great snack. They have only 3g of fat and 5g of sugar. To make it even better this little bar also has 4g of fiber and 6g of protein. It's low in sodium and if you're worried about it, no high fructose corn syrup. These are very similar to the Kashi TLC trail mix bars with slightly less calories and sodium and at about 1/2 the price($1.99 for Millville's).


They are small, but if I remember correctly so were the Kashi bars. Here it is next to a stick of gum. This was my "tied me over 'til dinner" snack. I haven't tried them all, but this one was yummy.

Dinner, I cooked. I know it's hard to believe, but I did. I do cooked, just not as often, now that I'm older and it's just me(eating veggies that is). I made my Sweet & Sour veggies and the veggies looked so good going into the pan I just had to get a shot. Lovely, huh?

Not too bad after being cooked either.

The sweet & sour veggies over brown rice. This was an excellent dinner. I really should cook more often. I forget how much better it is.

Well, that was my day in food. I think it went rather well. We didn't get to go for our walk though. Lucas had homework and I'm not brave enough to walk by myself. I did a little Zumba around the house though, but I didn't really sweat like I normally do, a sign that I didn't do enough. How about some comments today? Just say hello, whatever. Happy Friday!!
