Meatless Loaf

My Sunday breakfast, nothing spectacular, just a variety of cereal sprinkled with dried cranberries and chopped walnut, covered in Dannon strawberry yogurt. I used Life cereal, Cheerios and Cornflakes. Although it wasn't fancy, it was pretty darn good.

Feeling sort of dehydrated this morning, I skipped the coffee and went with Vitamin Water, Acai Blueberry Pomegranate. I love the taste of this one, but my favorite is their Power C dragonfruit flavor.

Dinner at Mom's today. Here's what was on the menu.

There was also meatless loaf made with Boca crumbles.

Holy Haluski -  simple egg noodles, cabbage, carrots, & peas.

Mashed Potatoes

Homemade creamed corn. The best kind. None of the canned crap.

More fresh veggies, yah!!!

Angel biscuits.

On my plate you see, holy haluski, creamed corn, fresh veggies, and meatless loaf. Unfortunately the meatless loaf was a fail. The boca crumbles did not work so well for this. It gave it a weird taste. I will try to salvage the rest of it, but I'm not sure I can. I only ate a few bites of it.

For dessert I had a cup of coffee with a slice of apple cake. I also had a second cup. I probably should have skipped the second cup. It was half caf. at least.

A little later, I couldn't resist a little mini 3 musketeers mint.

I had another bowl of the haluski when I got home for dinner.

I also had a cup of Chobani's lemon yogurt.

This post is sort of short, because I have to get to bed early, so that I can be up earlier tomorrow and I'd like to get a little more reading in before bed. Have a great night/day!!!

Shopping, Eating, & Catching Up

The last couple of days have been pretty messed up, as far as blogging goes. I'm now trying to get caught up, but I've just about got it licked. I got up yesterday hoping Blogger's issues would be resolved and I could get on with things, but I was delayed a little longer. Thankfully, now everything is getting back to normal.


This was breakfast. I was still out of vanilla yogurt, but I did have a Chobani Black Cherry in the fridge, I'd forgotten about, so I threw together a fruit & yogurt cereal bowl. I promise there's yogurt under there.

I wasn't really sure what to put with Black Cherry Yogurt, but it was pretty good.

I went shopping with my Mom & Lynda, since I couldn't do anything about the blog. For lunch we went to Red Robin. We all got Boca burgers. I got the Burnin' Love burger, which comes with crisply fried jalapeño coins, tangy salsa and spicy Pepper-Jack cheese layered on top of a cayenne-seasoned burger (Boca in this case). It’s topped with lettuce and fresh tomatoes to cool things off and served on a jalapeño-cornmeal kaiser roll with chipotle mayo. It was awesome and huge. I cut the burger in half. I ate half and saved half for later, as well as half the fries. I'm not really a French fry person, but these were pretty good. I also had a Sprite. It's hard to find bottled water in restaurants around here. They need to get with the program.


Ya, see those fried jalapeño coins and the Boca is huge on this burger. My biggest complaint is not being able to get a bite of everything all together. It's just too big. Now they need some Boca Sliders, wouldn't that be great? 
  Just realized, I forgot to get a shot of my Peppermint Mocha Frappuccino that we got at Starbucks, mine was decaf. We got them earlier, before we had lunch.
After doing some more shopping and giving our burgers a little time to digest we stopped at the Fresh Berry for a little fro-yo. The combo I got last time was so good, that I decided to get it again. I love me some Maraschino cherries.

I also like the coconut and graham cracker crumbs with the vanilla yogurt, but they were a little stingy with the graham crackers this time. I nearly forgot to get a shot of my yogurt too. You'd think I'd be used to this by now, but I've gone for years, just diving into my food, not worrying about a photo. I guess, it's going to take some time to really get in the habit. I don't usually forget when I'm at home.

Now it's time for "Guess This Mess".  In case you haven't figured it out, this is what's left of my burger and fries from Red Robin. Not nearly as appetizing, huh? That is half the burger, although it doesn't really look like it. It's just a bad shot. It was one sloppy burger. We ate our leftovers when we got back to Mom's. Lucas was there working on Lynda's computer, which sort of died, but he managed to get it up and running before we left. It's nice having a Geek in the family, lol.
 Well that was my day. We had a good time and I think we were thoroughly shopped out. I guess things can get back to normal now. I'm thinking about going to Wordpress but, I haven't really made up my mind yet. Any thoughts on the idea? I really could use some input. Have a great day!

Half A Workout Is Better Than None

It's pouring down the rain as I type, but we had sun and lovely weather all day. I woke up planning to enjoy a Banana Pudding Smoothie. I forgot I was out of vanilla extract which sort of made it less enjoyable. I tried substituting with almond extract, but it just wasn't the same. The vanilla is really key to recipe. It really enhances the banana flavor in this. I made it a point to get some more vanilla extract today.

Good, but not great. No more subbing the vanilla.

Lunch was late. We made a trip out to get a few plants for the garden. I meant to get a photo of them, but forgot. I will post a shot of them tomorrow. Hopefully we are going to plant them then, if the weather cooperates. Right now I only have tomatoes, peppers and cucumbers, but I have a variety of each. I can't wait until we can pick them. 
Lunch was leftover red slaw from our trip to Blue Bay and scalloped potatoes from Sunday's dinner. I also had a Boca vegan veggie burger seasoned with a little taco seasoning. This was a pretty good combo.

 I just love Blue Bay's red slaw.

Those who keep up with the blog probably know, today was Zumba day. I don't have to be reminded. I went to bed thinking about it, woke up thinking about it, and thought about it all day. It's usually the highlight of my Tuesdays and Thursdays.

This is my pre-Zumba snack. I had the last of the Coffee Brownie Trifle.

This evening we found out the lady that normally does our Zumba class was sick and couldn't make it, but we unfortunately didn't find out until after we were already there. Luckily we know of another place that also has a Zumba class on Tuesday, so we hopped in the car and rushed to make it to the other class. We were about 20-25 minutes late, but thankfully they didn't mind and we went and joined in for the last half. We still managed to get a decent workout and half is better than none, I say. Have you checked out free or low cost exercise classes? Churches are now offering these.

 When I got home I was ready to eat. I had one more cabbage roll and some cooked cabbage in the fridge. I was glad for leftovers.


I have been working with Ubuntu (Linux) today. I've been working in Windows lately, because I thought it would be easier, but now that I have everything set up, I can now work from either operating system. I really prefer Linux, but sometimes it's just simpler to go with what everyone else is using. Have you ever tried Linux? Well that's my day. I hope you have a lovely day. Cya tomorrow.

Pre Workout Smoothie Before A Butt Kickin' Workout

I didn't sleep well last night. We had a big storm and it was very hot in the house even with my fan blowing. The wind blowing against the house and the crash of thunder jarred me out of bed once, luckily it didn't last too long. We didn't suffer any damage here, but lots of trees were down all over and school was canceled, due to power outages. People are still without power. I am so glad we still have ours. I got up this morning, wishing I could just sleep the day away. I tried to fix myself another Pear Berry Smoothie for breakfast, but there was a wasp still lurking in my kitchen this morning. He dived at my head before I realized it, but he didn't get me. I am terrified of flying or hoping insects, especially ones with stingers. I had Dale take care of him, then I could make and enjoy my smoothie.

The rain was gone this morning by the time I got up, but the storm had brought cold air along with the rain. I will be so glad when summer is finally here, even if I have to fight the wasps.

I had leftover Digiorno spinach, mushroom and garlic pizza for lunch along with some fresh broccoli and carrots. It was a yummy lunch.


Since today was Zumba day. I decided to have myself a pre-workout smoothie. I experimented with a different combo, but it was a fail. It was drinkable, but I wouldn't want another one. I'm not sure what I didn't like about it, but it sort of made me wanna hurl. Luckily it didn't make as much as I usually make for breakfast.

 The whole evening all I could taste was banana. I like banana, but it doesn't like me. We really got a workout tonight at Zumba. The class I normally go to on Tuesday was canceled because of the storm, I guess power outage, so I went to the place where I go for Zumba on Thurs. They also have a Tuesday class. The class we go to on Tuesday normally is actually Zumba Gold. Thursday's class is regular Zumba. There has been a sub filling in for the regular instructor on Thursday's but we had the regular instructor tonight. She is a ball of fire. It was still fun, but I should be able to sleep tonight. 

When I got home, I was starving. I fixed a big plate of nachos again. This batch was a little different, but just as good.

 I had a good day and a great evening (except for the choco banana smoothie). I haven't ever enjoyed getting my butt kicked until today. Zumba is like playing hard. Do you remember as a kid, getting together with other kids and playing until you were completely worn out, but knowing you had so much fun you would gladly do it again? Well, that is Zumba. Now I think I'll take my kicked butt to bed. I'll let you know how I feel tomorrow, lol.

Breakfast Dessert

I hopped out of bed this morning. I already knew what I was going to have for breakfast. If you've been reading the blog, I bet you thought if would be another smoothie. I did consider making this into one, but decided just to try it in a bowl. Are you wondering what is in this yummy mess?

I decided to make a less healthy dessert into a more healthy breakfast. I knew I would eat it sometime today, so rather than add extra calories to my normal 3 meals, I chose to make it one of them. Killing two birds with one stone . It was delicious.
It was a lovely day today. The sun was shining and breezes blowing. It was a warm 84 degrees by afternoon, but not bad since the air was moving. The wasps were taking full advantage of the warmth and annoying me all day long. I had about 6 of them come inside to say hello. They seem to be coming in around my front door, something that will have to be fixed. I'm not very fond of bugs, especially flying ones with stingers. 
I got quite a bit done around the house today. The sunshine was working it's magic, inspiring me to do things I normally don't feel like doing. We ran a few errands and when we got back, I fixed me another plate of nachos with some of the leftovers and what I had on hand.

Very sloppy, very filling, & very good!

For dinner, I finished off my last piece of "soft cornbread" with a bowl of the leftover succotash I made. I heated the cornbread in my toaster over to crisp up the edges. It was the best part of the meal, although the succotash was pretty good. I would like to add, that I hate the word, succotash. It doesn't sound very appealing, and is probably one of the reasons I never ate it, until I was older.

It is colorful and very good and would have been even better, if I'd added some tomato juice to make it soupier. 
Well, since I've finished up early, I'm going to fold clothes and hit the sack. I hope you've had a lovely day wherever you are. Where are you? 






Nacho Grande Sunday

Today started off busy. I went straight to blogging after making my breakfast. I whipped up another Orange Pineapple smoothie and went to bloggin' while I sipped my citrus smoothie.

It was so yummy. It makes me want one now, looking at the photo.
I didn't finish up last night's posts before going to bed and since we were having dinner at Mom's today, I had to get them done this morning, get my shower and haul butt over to Mom's. I got some of the stuff done last night before going to bed, but still had quite a bit to do this morning. 

Today was Nacho Grande Sunday at Mom's. We were having lots of nacho fixin's, not to mention all the other food. It's always like a buffet with lots of variety. Here's the line up.

Taco Meat. There was also a vegetarian version with Boca crumbles, but somehow I missed the shot.

For dessert we had strawberry cake with cool whip. Yummy. I had a slice of this, but gobbled it up so fast, I didn't get a shot of it.

It was a beautiful day today, sunny and warm. My sister, Cathy and I put a big doll house together that Mom got for Lexi to play with when she comes over. We had a time getting it together, but we got it done. 
I'm counting this as my exercise for the day.


I sure was tired when I got home. Thankful for leftovers. I threw together a salad with my piece of broccoli cornbread, then I parked myself on the couch. It felt very good to sit down.
