Full Of Energy

I was up on time this morning, even though I'd only had about 5 hours sleep. It was a rough start, but once I was up and moving, I was good to go. I even got my living room mopped & ran the dishwasher, which I'd forgotten lastnight,  before the girls arrived. This was also before breakfast or coffee. I had yogurt with the girls. Lexi had a Yoplait Black Forest Cake yogurt and Mary had their Harvest Peach flavor. I had a Chobani Blood Orange Greek yogurt. I have to say, the Blood Orange is almost as good as the Lemon, so I am giving it 5 stars. I would probably choose the Lemon over the orange, but would be just as happy with the orange.

It has sort of a pink tint to the yogurt and there is lots of light red pulp in the bottom. It had a slightly tart flavor, but not too sour. Yummy!

After things calmed down a little and we'd had our yogurt. I decided to have part of this huge pumpkin muffin. Lexi and I split the muffin and Mary and I shared my half. I also had a quarter of a piece of cheese toast which I'd fixed for Mary and Lexi had the rest. Mary decide she wasn't interested in the toast and brought me the jar of dry roasted peanuts so that I could give her some of them.

I also had a cup of half caf. coffee with my part of the muffin. Mary & Lexi had milk.

I fixed the girls some Mac & Cheese for lunch, but Mary fell asleep while I was fixing it. Lexi & I put a puzzle together while the macaroni cooked, then while she ate her Mac & Cheese, I fixed myself an Amy's bean & cheese burrito and some rice with spinach & onion.
I accidentally bought 2 bags of spinach in case you're wondering about all the spinach and I need to eat a bunch, so that is doesn't go to waste. Mary had her Mac & Cheese shortly after I finished my lunch. The dogs barked when Lindsay got back and woke Mary up, so her nap was short.

After Lindsay and the girls went home, I mopped the kitchen & dining room and unloaded my DW. I rewarded myself with the last of my tropical blizzard.

A little later, I also had a piece of garlic toast made from half of a whole wheat bun, which was really good and if I hadn't eaten the ice cream, I probably would have eaten the other piece.

For dinner I had a crab cake wrap. I shredded some iceberg and spinach, which I spread over a flour tortilla. I chopped up a crab cake and put it over the lettuce & spinach. I added green bell pepper and shredded cheddar, then drizzled GV Spicy Ranch dressing over it all.

It was shear luck that this rolled up as well as it did. I was surprised.

It even held together pretty good after I cut it into. It was really good. I also had the 3/4 of a navel orange which I'd cut up the other day, but didn't eat. It was really juicy.
I can't believe that I'm not the least bit sleepy yet. I figured I would fall out while the girls were here. I'm not sure if it's from the coffee or the B12, I've started taking. It was a pretty good day, despite the rain the had. Now I'm calling it a night so that I can get some sleep. Hopefully I will get sleepy after I read a little. Have a great night/day!!!

Give Me Some Greens

We have a sunny morning, but the chance for rain gets better as the day goes on or so the forecast says. Yesterday was a good food day for me. I consider it a good food day when I'm pretty much satisfied with my food, you know, it's not just something I'm eating because, I'm out of all the good stuff.

What is the good stuff? Well for breakfast it was a banana pudding smoothie with peanut butter and cinnamon. This was yummy!


I did have a cup of decaf with a mystery donut later; even with the barely sweetened coffee the donut was a bit too rich. I broke it down into 2 separate snacks. I would be so happy if donuts came without glaze. I wonder if the donut places would leave off the glaze. I did use to get plain cake donuts at the Walmart deli (just plain or chocolate). I'm not sure if they still have these. It's been a while since I've bought them. I really don't have to buy sweets since Mom moved here, lol.

Any guesses?

This is my roasted vegetable grain salad that we got at The Fresh Market. This was the good stuff. It has red and brown rice. I love the red rice. This was the first time I've eaten it. The grain salad has sort of a Mexican flavor, with the black beans, corn, and cumin seasoning, really good.

I added some spinach to the salad, heating it until the spinach wilted. It was very good with the spinach. I also had a couple of eggs, scrambled with some taco sauce.

I suppose 1 egg and maybe some fresh salad would have been better, but I tend to choose quick over healthy. I need to do better in that area.

Another snack I had was some of the white chocolate mix with a few peanut butter pretzels, cutting the sweet with a little salty. I really need to get some apples, some healthier snacks. Any suggestions?

For dinner I had broccoli cheese tots. I added a little seasoning salt to the potato puffs and crisped them in the oven, topped them with hot broccoli and cheddar cheese. I put it all in the microwave for about a minute and melted the cheese.

Give me green. Spinach and broccoli are my favorite. I also love green beans.

An Apple A Day

Yesterday I had half an everything bagel and a one egg spinach & sun dried tomato omelet.



We went to Mom's yesterday. She fixed a late lunch for us. I had cornbread, sliced tomatoes, and mixed vegetable with green beans.

She also fixed apple crisp for dessert.

Lindsay and the babies came over and we visited for a while. I had to leave after that, since I had Zumba last night. I was feeling sort of sleepy last night so I had a cup of Mandarin Orange Green Tea with honey.

My eating schedule was out of whack, so I had a couple of wheat crackers with almond butter.

I also had an apple. It was too soon after eating at Mom's for a meal, but I new I'd be starved when I got back from Zumba, hence the snack.

I was really feeling zapped, but the tea and the snack helped get me through Zumba. It seemed even hotter at Zumba. We did some new moves. We usually laugh a lot when we have new moves, last night was no exception. For most of us who haven't moved like that in years it's hilarious. Hopefully next time I won't be so tired. It sure didn't help, but I survived.

For dinner I had my last Amy's dinner, the dairy free enchilada filled with black beans, rice and vegetables, with Spanish rice and beans on the side.


After uploading photos, I got a shower and went to bed. I actually slept like a rock for most of the night. I did wake up a few times, but was able to go right back to sleep. I still feel sort of sleepy today. Hopefully that will improve as the day goes on. I had my apple for the day. I'm hoping there's some truth in the old saying as well. Happy Friday!

A Little Pep In A Cup

Having not slept well (worse than usual), I decided I needed breakfast a little early this morning, so I'm having it now has I type, but that's for tomorrows post....on with yesterday.

Yesterday I had apple pie al a mode...well, almost. I had leftover apple pie, heated in my toaster oven with vanilla yogurt on top, making it just a tad bit healthier.



Lunch or breakfast #2, either way it was good. I had a spinach & sun-dried tomato omelet with a sprinkle of Parmesan (just because I have the good stuff, I hate the powder) and half a toasted poppyseed & onion bagel.

I'm actually using up my entire bag of spinach this time. Normally I can never get it all eaten before it starts getting squishy. One person eating an entire bag of spinach can be difficult. The key, I think is in cooking some of it. This is one of my favorite ways of eating eggs, but eggs are something I have to be in the mood for.

Another cup of coffee yesterday. I assume had something to do with me not sleeping well. I only had half a cup. I made it into a peppermint mocha with cocoa and peppermint syrup. I got it a little too sweet, but not bad. I'm use to working with a whole cup. I really miss my coffee, but I need to get some decaf.

For dinner I made crab cakes, my Cajun crab cakes.

I also had a big salad with my crab cake. My salad had spinach, iceberg, cucumber, broccoli, tomato, carrot, onion and spicy ranch dressing, yum. This was really good. Crab cakes are one thing I eat that I have help eating. The men in this family are allergic to vegetables, no, not really, but you would think so.

I'm experimenting with eating patterns, the time of day at which I eat, to improve energy and sleep, so that I can avoid coffee and stop craving carbs. I've been reading some on the internet. I received a link in a "Women to Women" email newsletter about eating for adrenals, more energy, better sleep, so I thought I would give it a try and see if that helps. Dessert Or Breakfast, What's The Difference

Old habits die hard. Staying up too late again. Getting sidetracked first thing this morning does not help.

Anyway....Yesterday I had dessert for breakfast. I had the blueberry cornmeal cobbler with vanilla yogurt, since I don't have any vanilla ice cream. Actually I think this was better, more so if it had been Chobani or Dannon. It was the last of the My Essentials brand and I am not sorry.


Why isn't cobbler a breakfast food. What's the difference? I suppose most desserts aren't healthy, but this one's not so bad. It does have fruit and it wasn't terribly sweet; no worse than a muffin or a pancake and I topped it with yogurt. How can that be bad? (Except that the yogurt I used was runny, lol, and not a brand I prefer.)

For lunch there was leftover brown rice in the frig. I added a little frozen corn, heated the rice & corn in the microwave, chopped up some spinach and Roma tomatoes, threw in a little garlic & basil, and heated it a second time, just enough to wilt the spinach.

I don't normally add the basil or corn, but it was very good this way. This is one of my favorite ways to eat rice and a great way to use up spinach & tomato.

I had one of my coconut cream fruit bars for dessert. I picked these up at Aldi. It was pretty good, but Edy's is better. I would have been perfectly satisfied with it, had I never eaten one of Edy's. These are cheaper so it helped that I didn't expect it to be great and if you can't afford Edy's these are a great sub.

For dinner I revamped the macaroni salad. I added broccoli, red banana pepper, extra carrot and more coleslaw dressing and had it over a bed of spinach. This is my favorite way to eat macaroni salad.

I also added a little shredded colby/jack cheese, although I like the crumbles better. It's what I had and it was yummy either way.

After dinner I sat on the couch, ignoring the fact that I needed to upload photos until it was late. I was watching old movies on THIS channel, a local channel that shows old movies, etc. I was mostly fooling on the internet. I can't even remember the names of the movies. When I finally finished uploading the photos and was headed to bed Craig Ferguson came on. I like to watch Craig and he was doing his show from Paris, which was different, so I had to check it out. To me, it wasn't as good as normal, so I did cut it short and go to bed finally. I will have to work on monkeying around less and getting to bed earlier. 

Now since I have no yogurt, what to have for breakfast? Dessert maybe? What did you have? Have you had dessert for breakfast? You can tell me.
