Another Leftover Makeover

First a late post, then an early post, what a day. I'm getting this one out early because I will have little girls in the morning. I've already straightened up the house today, that way, I won't have much to do while they are here. I slept in this morning, so I had my slice of pumpkin nut roll for breakfast. This was part of Sunday dinner's dessert. I was too full to have any while we were at Mom's, but I brought a little home. It was nearly gone before I even thought about a picture, so I just got one of this morning's slice.


I had a leftover piece of Sunday's vegetable lasagna for lunch along with the last of my bagged iceberg salad, some cucumber and carrot slices and a little light ranch dressing.


I had a couple handfuls of the dutch apple snack mix a little later.

Before dinner I was feeling sort of sleepy, I had a cup of hot tea to wake me up, no caffeine of course. I had Moroccan Mint. I added a little mint syrup to sweeten it slightly and boost the mint flavor. It was really good and I got to enjoy the whole cup.

Dinner was a leftover makeover. I had one of the two leftover cheese manicotti. I placed both manicotti in a small baking dish. I topped them with a handful of shredded spinach leaves, then some of the leftover sauce and sprinkled the top with a shredded Italian blend cheese. I heated it for a few minutes in the microwave and then put it n the toaster over to brown the cheese just a little.

I had onion rings to go with it. I saved the other manicotti for another meal.

Although there wasn't much I could do about the manicotti filling, the spinach and cheese were a definite improvement.

Now that I've finished up here, I planned to do a little reading and head off to bed. Have a great night/day!!

Tummy Trouble

Late night last night, late start this morning. Yesterday started out pretty good with a nice hot cup of coffee, a pumpkin waffle with cream cheese drizzled with syrup & sprinkled with cinnamon, and half a gala apple thinly sliced.


Just a little creamer and coconut sugar in my coffee.

The waffle was super yummy!

Before going to Mom & Lynda's for Sunday dinner I had a cheesy snack. I coarsely chopped sharp white cheddar and sprinkled it over tortilla chip, then I put them in the microwave long enough to melt the cheese. I pulled apart the cheesy gooey chips and dipped them in hot fire roasted salsa which Lucas had pureed. He's picky and doesn't like the chunks so, if it gets him to eat it, I'm perfectly fine with it.

There was lots of food for our Sunday dinner. First up, a pan of vegetable lasagna which was pretty good except for the zucchini, which I picked out.

I forgot to bring home pasta salad. I was feeling sort of overwhelmed yesterday for some reason.

Angel Biscuits

My plate was packed with a bit of everything. I had some of the lasagna, broccoli casserole, green beans, salad, potatoes, and also a MSF riblet, so that I wouldn't starve, lol.
I even tried a couple of Hershey's Pumpkin Spice Kisses and had a cup of coffee off camera a little later.
Needless to say, I was stuffed after eating all that food. I really didn't eat quite all that was on my plate. My stomach was feeling kind of yucky since my morning snack and yet I ate too much anyway. It continued to get worse after dinner. I didn't eat anything else for the rest of the day. I did fix a cup of Moroccan Mint Tea to try and sooth my stomach, but I didn't get to drink much of it. 

Lindsay and Reese called needing me to take care of the girls while Lindsay went to the hospital. She has been having severe acid reflux problems during her pregnancy. We dropped everything and rushed over to their house to pick up the girls. It was a late night getting them settled and waiting for Lindsay & Reese to get back. I didn't get a lot of blogging accomplished, got to bed super late and slept in this morning, which is why I'm getting this post out late. Luckily everything is fine and everyones' tummies are straightened, for the moment. Now I'm off to feed my puppies who tummies are empty and are impatiently waiting for their food. Stouffer's Cheese Manicotti Review

This morning is pretty much like most mornings, I'm awake and I'm typing away during or after breakfast. Lately I've really needed my morning coffee. Yesterday was no exception. I had a big cup with coconut sugar, powdered creamer and cinnamon. I was on a peppermint kick for a few days, but now it's cinnamon. 
I also had a yogurt parfait with Dannon peach yogurt, Gala apple chunks, a cinnamon waffle cut into chunks, and a little Kellogg's Fiber Plus Berry Crunch cereal, just for texture. Yummy!
It looks a little better than the last parfait I fixed. I really need parfait lessons. I had to use a bigger glass this time. The other one was snack size.

I fooled around too long before fixing something to eat. I munched on the last of my sesame sticks while I fixed lunch.

I had a boiled egg salad with iceberg salad from a bag, spinach, cucumber, carrot, onion, and broccoli, topped with grated or chopped boiled egg.
Usually I use a grater for my egg, which works really well. I learned that little trick when I worked in a school cafeteria. It's a great way to make egg salad. This egg was just chopped since I was only doing one.
I used light buttermilk ranch for the dressing. I added a little black pepper and dill weed at the last minute.
For dinner I made Stouffer's Easy Express Cheese Manicotti. 16 minutes in the microwave vs. 67 minutes in the oven, you can guess where this was prepared.

It cooked up pretty well, no cold spots or underdone noodles. I didn't much care for the cheese filling inside the manicotti noodles. It was not very cheese like. It was more the texture of grainy pudding. I was in the mood for something cheesy and gooey and this didn't satisfy that craving. The sauce wasn't bad. It had a pretty good flavor, slightly spicy like with black pepper maybe, but not hot spicy. For me the filling was the main turn off in this dish.
I had the two manicotti suggested serving amount with a medium salad with light buttermilk ranch and a piece of garlic toast. This was a plenty for me. I actually could have gotten by with a smaller salad. I really have a hard time making small salads.
There are six manicotti in the package or 3 servings. Lucas ate 2 also. I forgot to ask what he thought of them. I may ask and add his opinion later. I just don't think I'm much of a fan of frozen manicotti. I haven't found any yet that I've really liked.
For me it was just edible and gets 2.5 stars, since I did like the sauce. I don't think I'll be buying it again though, unless they say, "It's new and improved" or something like that.
After dinner we watched a movie, Transformers Dark of the Moon. I liked the other Transformers movies, lots of action and not a lot of blood and gore. I also like Shia LaBeouf. He is great for part he plays, kind of tough, very sensitive, and funny when he needs to be. I was a little worried about the new girl friend in this one. She wasn't exactly who I would have picked for the part. She was just there for eye candy, I suppose, but those bee stung lips only had a comedy effect for me. I still gave it 4 stars.
After the movie, I stayed up late reading. I'm still trying to get "The Girl Who Played with Fire" read. I only have until Wednesday to finish it. I'm not sure I can manage that. Wish me luck. I may try to get in a little reading done this morning. Happy Sunday!!!

Tai Pei Mini Vegetable Spring Rolls Review

It's a beautiful cool fall morning, but I wasn't very happy to see it come so soon. I just wanted to keep right on sleeping this morning, but I have things to do. Luckily I don't have 2 little ones to chase after today. Yesterday, I felt the same way, but the girls were coming. They got here before I'd had a chance at breakfast. I a biscuit with butter and dutch apple jam with my coffee. I mixed in a little peppermint cocoa mix. The girls had eaten a little before they got her, but Lexi had a sausage & cheese biscuit anyway (she didn't eat the sausage). Mary nibbled on a cracker, but didn't really want anything else.




I fixed a tortilla casserole with the last of my Easy Mexican Rice. I added a little water, some Mexican oregano, MSF crumbles and extra garlic to the rice and heated it on the stove. I put some course crushed tortilla chips in the bottom of the bowl, then I spread the rice & bean mixture over the chips. I put a later of the bite sized tortillas on top of the rice & beans, sprinkled them with shredded sharp white cheddar and a few jalapeño slices. I put it in the microwave just long enough to melt the cheese. This was really pretty good. I will have to remember to do this when I eat the leftovers from the freezer.

I had the rest of my blizzard. After spooning the ice cream out into the bowl, I licked the spoon. This was a mistake. My top lip stuck to the outside of the spoon and I didn't realize it. when I pulled the spoon away, you can guess how that went. Well, I had a hard time eating the ice cream and anything else since then.

I made Tai Pei Mini Vegetable Spring Rolls for dinner.

I had planned to get some broccoli slaw to go with my spring rolls, but they didn't have any for some reason, so I just bought broccoli and had a salad with it, some carrots, cucumber and some Asian Toasted Sesame dressing. The egg rolls were pretty good. They didn't get quite as crisp as the Chungs Mini Egg Rolls, but there was more filling, I think. They had a good flavor. I actually think they were more like egg rolls and the Chung's were more like spring rolls, but either way the filling was basically the same. I also believe the Tai Pei rolls were a little short and fatter. I would choose either one, of course I did prefer the crunchier wrap of the Chung's, but that's just the junk food junkie in me. I didn't try the sauce for these, because I had some sauce packets that needed to be used, but I'll update on the sauce as soon as I try it. I'm giving these 3.5 stars since they didn't wow me, but they are good.
I had a few of Lucas' spicy seasoned sweet potato fries. My injured lip wasn't really liking the spices, but the rest of my mouth love these.

Arnold 100% Whole Wheat Sandwich Thins Review

No, this is not breakfast. It's a late night snack I had, that didn't make yesterday's post. Lucas made mashed potatoes last night, using butter & light cream cheese with a little garlic, onion, & black pepper. They were very good. Cream cheese is a great substitute when you're out of milk and it adds lots of flavor.


This morning I barely had time for breakfast before the girls arrived. I made coffee, mostly decaf and fixed myself a cup with powdered creamer and coconut sugar. I had the other half of my honey bun and Gala apple as well. Yummmyyyy!

For lunch I fixed a Mexican style stew using my Easy Mexican Rice.

I added a little water, frozen corn, MSF Veggie Crumbles, and a pinch of salt. I was actually going for soup, but it was more of a stew. It was another great leftover makeover. I had a few bite sized tortilla chips on the side.

Lexi had an ice cream cone before going home, which made me want ice cream too. I had some of my DQ tropical blizzard which Mom & Lynda brought as my afternoon snack.

After the girls left, we had to go out to pick up a few things for dinner. I bought Arnold 100% Whole Wheat Sandwich Thins. They looked very good. At first I didn't realize they weren't the Nature's Own Sandwich Rounds I'd gotten before.



I made a veggie burger when I got home using a MSF Griller Prime burger, spinach, onion, dill pickle slices and ranch dressing. The pickles are Great Value brand btw. They are very thick slices of pickle and just as good as any I've eaten. I do love the chunky pickles best.

I really like these sandwich rounds. The Nature's Own brand got 5 stars and these definitely get 5. I actually like the Arnold brand better, because they have more fiber than the Nature's Own. The also have slightly more carbs & protein and more sodium, which may effect your opinion. These also seemed a little bigger around, but I'm not sure. They were just as soft and tasty as the Nature's Own brand.

After dinner I got ready and went to Zumba. The whole day seemed very rushed. We were suppose to dress up in a costume for Zumba class, but I wasn't able to come up with a costume, having been so busy lately. I didn't feel so bad once I got there and saw there were only 2 who wore costumes. We also had a very small attendance, maybe 7-8 showed. Best costume won a Subway Certificate. No problem choosing a winner, since the instructor was one of the two in costume. I was very tire after Zumba from such a busy day, but enjoyed it regardless.

I had a gingerbread man as my after Zumba snack. He wasn't looking very manly with his heart shaped buttons and what looks like pink sugar.

....but I gave him a more manly look with some cream cheese and a few raisins.
Now it's late and I'm not going to get any reading done tonight. I'm off to bed, expecting another busy day tomorrow. I'm really hoping I sleep good tonight. I really need it. Have a great night/day!!!
