Fresh Market Snacks & Dinner

I must say it was a beautiful day today, although I did wake up this morning with back trouble; my usual should muscle spasms. I think from lifting laundry over puppy gates, but with some ibuprofen and an ice pack it was manageable. I had the other half of yesterday's breakfast and started getting ready to leave for  dinner at Mom's. Today's dinner was a surprise to me. Usually Mom emails and lets me know what the menu will be, but she was shopping on Saturday and didn't get around to emailing me. 

My daughter, Lindsay and the kids were able to join us. My DS, Cathy and BIL, Eddie were there. Mom and Cathy made a trip to Fresh Market yesterday and got some snacks for today. Here Lexi is sampling the Autumn Mix, not quite herself today, but I did get a little smile.

Now for the snacks, while dinner finishes cooking. This is a shot of the Autumn Mix. I am assuming it was from Fresh Market, but not entirely sure. It is candy corn, white raisins, peanuts and reese's pieces. I have a recipe for another Autumn snack mix, I will try to post later.

And Sesame Sticks. I love these. These are plain but they also have a spicy and a sweet version, I love them all.
For the meat eaters, there was chicken, steak and barbecued ribs.

Afterwards we had assorted donuts from Dunkin Donuts and mini muffins from Fresh Market (not sure what kind, but they were maybe pumpkin spice or something similar and very good). There was also some big muffins from Dunkin Donuts that I forgot to get a shot of which were similar in taste to the mini's w/o the creamy icing; again very good and I got to have coffee, because it was decaf and very good. BTW despite waking up with back trouble, I slept very well after not having regular coffee with breakfast yesterday.

My Hummus Recipe

Yesterday's page views rocked, but today's were disappointing to say the least. I've really had the most views of my Fresh Market goodies. Hopefully I will be able to post some more things like that. For now I will keep you up to date on what I have. 


For breakfast I had another piece of the Fresh Market Caramel Apple Nut Loaf with peanut butter, dried cranberries and some apple with cinnamon and sugar sprinkled over it. I don't think I will be having coffee until I can get some decaf. The caffeine has really been interfering with my sleep no matter when I drink it. 

 For lunch today, I made some hummus. I've been wanting it for a while, but couldn't get into the mood to make it, although it's really not hard. All you need is a hand blender or food processor. This is my hand blender, which I love and use for lots different things. Mine has a chopping attachment (on the left), a blending attachment (on the right) and also a whisk. I used the blending attachment to blend the tahini which separates from the oil. I used the chopping attachment to chop and blend everything together.  




These are the ingredients - tahini, chili powder, cumin, lemon juice and cilantro, (also garlic, which I forgot a photo).



And of course the garbanzo beans and liquid from the beans.


 Then Voila! You have Hummus. (recipe below)

  1. Drain beans and reserve the liquid when you do so.
  2. Blend beans and 1/8 cup of the liquid., along with the other ingredients, except cilantro.
  3. Process until the mixture is smooth.
  4. Add liquid until the desired consistency is reached.
Note: 1 teaspoon of Cajin Injector Hickory Grill Seasoning maybe used instead of the cumin and chili powder or sun dried tomatoes and basil leaving out the cilantro as well. I also don't think the salt is needed when using the Hickory Grill Seasoning. 

Here we have my lunch/snack. I had a very productive day cleaning, so lunch was late and almost dinner.


Not being too hungry when dinner came, I just had a veggie egg roll with Hoisin sauce and a plain old veggie burger. I didn't bother taking a shot of the veggie burger.

What Luck

I've been trying to figure out what to blog about. Lately, I just think the days get more boring as they go. I have no pictures to post, which is usually the highlight, I would think, but as you may have guessed, my camera battery died. In my own defense, I did check the battery. I checked it day before yesterday and I remembered to check it again today but today was too late. I was trying to squeeze in a couple of shots, once I realized it was low, but the battery died just as I was trying to load them on to the computer. What luck! I had all today's shots selected. I hit copy and poof....the battery died. 


We did watch a movie. It was Kick-A_ _. I mean that was the name of the movie. It was not what I had expected. We gave it 3 stars. I like action movies and this one had potential but it somehow fell short. 


Hey, I think my battery is charged, I mean my camera battery.  Yes it is. That means we shall have pictures. Like that makes the day so much better. Oh well, just bare with me. I'm financially strapped right now. It's tough being interesting when you're broke, but it will get better.

Ok, here are the pictures. There are only a few. First up is my glorious breakfast. I had a cinnamon raisin bagel with peanut butter and dried cranberries, a juicy nectarine and yes, that's coffee. It was cool this morning and thanks to DH was already made, so I didn't want it to go to waste, lol. Lunch was a repeat of last night's dinner, so I didn't bother with a picture.


Next for your viewing pleasure, we have my dinner. I had a lovely salad with Spring Mix lettuce, tomato, cucumber, onion, pepperoncini peppers, a little mozzarella, and some ground flax seed sprinkled on top with my Good Seasons Italian dressing. I also treated myself to a little Sierra Mist Cranberry Splash. Normally I like to throw on a few walnuts as well but I was starving and didn't think about it until it was half eaten. Oh well, I will have some next time. BTW the crackers are vegetable crackers courtesy of Walmart or should I say Great Value, which are very good despite being a generic brand.

Mushroom Adventure

We finally got some rain. It wasn't very much, but you could tell it had rained. I don't particularly like everything all wet and soupy, but we do need the rain and it didn't rain all day. In fact the sun was out shortly after I ate breakfast.







This one, I'm saving for a background, lol.

 I didn't get to enjoy my everything bagel this morning. I love the Food Lion bagels from the deli but they aren't fresh, they are frozen and thawed and once they do, they only last about 3 or 4 days. I can never eat them before they spoil, since I only eat a half each day. I don't think I will waste my money anymore. I will just have to settle for some other brand. Instead of my everything bagel, I had a pink ribbon(cherry vanilla) bagel from Panera smothered with peanut butter and topped with some dried cranberries. I wish I'd had some dried cherries. They are bigger and better, but I do love dried cranberries.  


 For lunch, I had what was left of my spinach and cheese ravioli, cut up on a large salad with some shredded mozzarella and greek salad dressing.  I just remembered I have a package of the Good Seasons Italian dressing mix and I had been doing without thinking I needed to get some. I like to make my own dressings, although I do have some store bought favorites and the dressing mix packets are a great back up, if you can remember you have them, lol.


After lunch I decided to go for a walk outside. I have been walking my dogs down beside the house. There are a lot of trees and frequently we see squirrels and rabbits. I figured I would walk there and see what was out, but I guess all the critters were hiding. Coming back,  I passed an old dead tree that is really just a tree trunk. The top was broken out years ago in a big ice storm we had. At the bottom of the tree, I saw these large clusters of orange mushrooms. You probably thought I meant the edible kind, when you saw the post title, sorry. Well, they were really beautiful or at least I think they are. Luckily I brought my camera so I can share my find with you. I hope you enjoy. 







It was a pretty good day, considering it was spent at home doing nothing special. I hope the food photos aren't too boring. I do like taking pictures and it gives me a chance to get familiar with my camera and so... I leave you with one more food photo. A Visit to Patterson Farms Market

I manage to skip my everything bagel this morning, but I will have to have it tomorrow. I did have the caramel apple nut loaf along with one of the honey crisp apples. I slathered the nut loaf with warm peanut butter and it was very yummy. The honey crisp apple was crisp and slightly tarter than the pink ladies or the galas. It was very juicy and went perfectly with the sweetness of the nut loaf. I think it would be very good for making cakes or muffins and although I didn't get my bagel, breakfast was a hit. I just wish the night had gone so well.



I didn't sleep very well. It may have been yesterday's coffee, but it's hard to tell. I didn't have any this morning, just in case. I am caffeine sensitive, but it was half caffeine coffee. I am planning to turn in early tonight either way. Breakfast was also more like lunch. The rest of the day was not quite a productive as yesterday. It was a fairly lovely day. It started off with a little rain, but since I slept in, it wasn't a problem for me. The rest of the day was dry and sunny. There obviously wasn't a large amount of rain because, I really wouldn't have known it had rained, except for the fact that I was awake briefly while it was raining.

Later I went to Patterson Farms and picked up a few veggies for my evening salad. I got a few cucumbers, a couple of tomatoes, a red onion and a yellow onion.  I had some spinach and cheese ravioli  with my salad. I sprinkled the ravioli with a little parmesan and oregano. It wasn't very elaborate but it was very good and very filling. I also had a little of the nuts and berries mix later as a snack. I didn't realize until I ate some, that it has little dried blueberries in it. It was a nice surprise. I like blueberries but I've never eaten them dried. I had added some lightly salted mix nuts to the mix to make it go farther. I just love the salty sweet taste.

An Awesome Day


The day started off with my not too healthy breakfast, which consisted of a half an everything bagel with cream cheese, a piece of my caramel apple nut loaf and a LARGE cup of coffee. The nut loaf was delicious. I normally have half an everything bagel and cream cheese, an apple and lately water instead of coffee. I wanted the nut loaf with coffee this morning but couldn't do without my half bagel. I crave those things in my sleep, lol. I maybe having the it again in the morning but with an apple, if I can talk myself out of the bagel.

It was an awesome day. The sun was out and it wasn't blazing. It was one of those days when I get a burst of energy and I want to do everything; of course I didn't get it all done, but I felt like I accomplished quite a bit. I also got a new project, that I will hopefully be able to start on soon. I've got an old drop leaf table that needs some TLC. I am not sure if it can be refinished or if it will require a coat of paint. I will try to post some before and after shots once I have it done. I love projects. I am going to try and keep some projects going; trash to treasure type stuff.

This afternoon I went to the grocery store to pick up a few things. I was disappointed that several of the things I normally get, they were either out of or no longer have. This seems to happen a lot lately. I have noticed that they don't carry as large a selection of things as they use to and it also seems like every time I find a product, that I can afford and that I like, they stop carrying it. I bet I have switched laundry detergent for this reason at least 3 times in the last year. I sure wish there were more than one store with low prices, so that I could have a choice. I am considering paying a little more just to be able to get what I want.

I did get some lovely fruit. I got apples, which I love and I also got a mango and some nectarines. My new favorite kind of apple is the pink lady apples, but they were out of those. I got a couple of honeycrisp apples, which I've never tried and a couple of galas. I like an apple that is slightly sweet and crisp but not as sweet as a red delicious, which describes the pink ladies, the fuji and the rome apples, the galas are slightly softer. Fuji and rome are great for cobbler, apple crisp and pies. They are firm and don't turn to mush when baked. I like the granny smiths for muffins and cakes, but I'm not especially fond of eating them fresh. It's one I have to be in the mood for. The gala and the golden delicious are softer and are probably best for applesauce or apple butter.

I wasn't really hungry while we were at the grocery but for some reason I wanted to buy everything. It's funny how a few things turned into almost $60. By the time I got home I was ready to eat. I had planned to fix me some broccoli slaw with Asian Sesame dressing but since they didn't have the dressing and I forgot to stop somewhere else on the way home I will be having it another day. I decide to settle for a Boca burger since DH and DS were having burgers. I had mine with spinach, cheese, onions, pickles and Mesquite BBQ sauce. I like the vegan Boca better. Yes MSF burgers are good but they are more expensive, have more fat and calories, so I opt for the Boca. I hooked on them at the Red Robin, which is another place I like to eat. You should try the Burnin' Love burger. Yummo!

Well that is my day or at least most of it. The rest will be spent on the computer, listening to tv ( I don't actually watch it) or listening to music. Which reminds me, I'm going to get the new Michael Buble song, Hollywood. I loved the video.

Sunday's Photos Delayed

Well, it seems as though today's photos are postponed. As luck would have it, my camera battery died shortly after taking a few photos. I am not happy with my camera. It is a Fujifilm FinePix Z. It takes pretty good pictures but it has it's own special battery, which has to be charged on it's own charger out of the camera. Unfortunately I only have one battery which means, I have to wait until it is charged before I can use the camera again. My old HP camera had rechargeable AA batteries and a charging stand for the camera itself. When my batteries died, I could either sit the camera on the charger to recharge or pop in a couple of fresh AA batteries. I always carried a couple in my camera bag, which was very convenient should I be snapping away somewhere and suddenly realize my batteries are dying. I don't know if the cameras actually tell when the batteries are low until it's too late or not, but I've never noticed if they did. It may be my own fault for not checking but I know I can't be the only person who doesn't. My next camera will be more suited to my needs, hopefully.

Now I will tell you about the rest of the day. I woke up late this morning. I had gotten my sleep pattern messed up earlier this week, having coffee too late in the evening (as mentioned in an earlier post).  I still haven't gotten straightened out yet.  I had me half of a cinnamon raisin bagel and an apple, to tide me over until dinner was ready. We usually have dinner at Mom's on Sunday. I jumped in the shower and after that it wasn't long until we were on our way. We were having sort of a birthday dinner, for me. We had a lovely dinner. I had portabella mushrooms stuffed with veggie crumbles, bread crumbs and parmesan/ramano  cheese, potato casserole, spicey bean soup, broccoli pasta salad, and parker house rolls. There was also pork loin, turkey breast, and roast beef for the meat eaters and for dessert, my favorite red velvet cake, with (as Mom says) gravy icing. In case you are wondering, the icing is made sort of the same way you make gravy. It sounds gross, but is really very good.

My daughter, her husband and my 2 grand babies were there, my sister and her husband, my son, and of course my mother was also there. My sister and her husband brought me some goodies from the Fresh Market. We all love the Fresh Market. We all had a good visit as usual. Afterward we packed up leftovers, said our good byes and headed home. It was a good day. Hopefully I will get some pictures up  shortly.

Why I Blog

I felt the need to post something, anything, ultimately nothing. It has been one of those days. One that is uneventful.  There has been absolutely nothing going on here today. I just don't know what to do with days like this. I may as well have posted a picture of a clump of dirt. Yet here I sit, typing away, trying to come up with something interesting to say. Finally, I have something to say. I will tell you why I am blogging, why I keep coming back.

 I have mostly been surfing the internet, reading article after article about blogging. I did find one article that was interesting and different from the others. It is about how to make money blogging. Yes, I would like to make money doing this, but I know that I have a lot to learn and that it isn't going to happen overnight. For now this is something to do, something I like doing and I hope to keep doing and if I make money along the way, that will be a bonus. 

I have always enjoyed keeping a journal or diary. I haven't actually done that lately. I started this blog years ago, but I didn't stick with it. Years later, I attempted it again; again I didn't keep it up. I recently read my horoscope (No I don't live my life according to my horoscope.) and it said I should keep a journal. I thought, what the heck and decide to give the blog another try. This time I decide to make it public; a little added motivation. I have been keeping track of page views. It adds some excitement to it. It also challenges me to do better. I would love the idea that someone would actually be interested in what I have to say, not that anyone really is yet, but maybe eventually.  For now, I am just pleased that people are looking to see if they are interested. I hope that they will come back and see how I'm doing later or if I'm doing. 

I am researching other blogs as well. I love reading about things I am interested in, with bits of peoples lives thrown in. I like knowing how other people live, how they do what they do. It inspires me to do more. I want to be one of those people who inspires others. I want to give someone else the desire to inspire others. So for now, I will keep blogging.

The Last of Summer

Here is the last of the veggies from my somewhat limited garden, which I started and kind of never got around to taking care of. I usually have a small but fairly nice garden but this year was not my year for gardening.  It was a nice day. I actually felt like doing some gardening today but I had things inside I needed to do first and I ran out of time. Maybe I can get a little done tomorrow.

I guess I will be enjoying some home grown peppers in my salad tomorrow. I eat a lot of salad. There are so many things you can do with salad. It is one of my favorite things to eat and if you are eating out then I must say Ruby Tuesday's is the best place for salad or at least it's my favorite place. They have the freshest salad.


I tend to eat more salad in the summer. I love the home grown tomatoes and cucumbers I usually get from my garden. This year, I got them mostly from produce stands and farmers markets, never from the grocery store if I can help it. It just isn't the same. I love the heirloom tomatoes and the little pickling cucumbers the best. Heirloom tomatoes can be a little ugly on the outside, but I love the way they look on the inside. I call them meaty tomatoes. They don't have a lot of seeds like other tomatoes and as much as I love tomatoes, I hate tomato seeds or should I say that jelly looking stuff they're surrounded by. That's also the reason I love Roma tomatoes; not a lots of seeds there either.
 
I hardly eat any fresh tomatoes or cucumbers in the winter time and since I didn't eat as many this summer as I normally do, I will surely miss them. I will also miss the sunny days since we don't see quite as many in the winter. I am glad that the 90 degree and up days are fading but I'm just too cold natured to enjoy winter. I need to live somewhere where it stays in the 70's year round.

We've already had the heat on this year. It has been fairly cool at night, but then again, I did say I was cold natured. What can I say, even my dog wants a blanket. I guess soon, I will be saying, "See ya later, Summer." and looking forward to the things I enjoy about Fall.

A Beautiful Day

 I find myself wanting to write, but not knowing what to write about. I had a very nice day today. To start off with, I slept very well. I've been sleeping better the last couple of days. I think it is because, I have been trying to think more positively. I have been meditating, doing breathing exercises, and anything I can do to reduce and let go of stress; so far, so good.

 When I woke up this morning, there was coffee already made, thanks to DH. I had a glazed pumpkin spice donut to go with it. Yum oh baby! Actually I prefer donuts without glaze but hey, it was pumpkin spice. It would have even been better had it been a coffee muffin from La Patisserie. Anyway, the donut and coffee was good.



 It was a beautiful day. DS, Lucas, got home early from his classes. We drove over to DD, Lindsay's house. I got to see my grand baby, Mary. My other grand baby, Lexi was taking a nap, but Mary was all sunshine and giggles, playing with her favorite toy at the moment, a soft block that rattles. She is such a smiley baby, getting more vocal everyday. Seeing the grand babies, always makes my day. 

We also ran over to Mom's house and sat for few moments, where she loaded me up with more caffeine. We will see how well sleep comes tonight. Thinking positively, I am sure sleep will come and it will be peaceful. Looking forward to another beautiful day tomorrow; sunny and 79 degrees. Hope you have one too.

My Birthday

My birthday. I never even thought about it until sometime this afternoon when someone mentioned it to me. This should tell you how I celebrate my birthday. Over the years I have learned to do without celebration. I don't have a lot of money to spend and I have learned to use what I have for what I need, not that I always spend wisely but parties aren't high on my list of priorities. I don't usually have cake unless someone makes it. Don't get me wrong, I can make cake and I like making cake and eating it, but in my house I usually wind up eating it all, so I don't make them often. For the past few years, I have been treating myself to ice cream on my birthday but this year, I forgot. I usually buy the birthday cake flavor of Deluxe brand ice cream. It is very good and I don't feel the need to eat it all at once, because it keeps well in the freezer. Maybe I will get some this weekend. Thanks to my Aunt, I did get a pumpkin faced donut from Krispy Kreme and a Caesar salad from Christo's. I do love a good Caesar salad. Here is a link to a recipe for a Caesar salad that I like to make myself.

I would like to get into the habit of taking more pictures. I really am terrible about capturing the moment. Some people are forever taking photos but it never crosses my mind until it's too late. It was a miracle I managed to get pictures of my grand daughter, Lexi's birthday party. I usually rely on friends and relatives for pictures. Until recently, I avoided cameras and I feel strange taking pictures of others because I always hated it. Finally, I figured people will take your picture willing or not and the pictures usually look a lot worse, than if you just smile and let them snap away. I have also learned to pay special attention to my appearance, if I know there may be a camera lurking about. Can I just say, that I don't think taking photos of people while they are eating or talking is a very good idea unless you are trying to capture people making strange faces. I didn't have a very exciting day, but it wasn't a bad day at all. The sun was shining, it wasn't too hot or too cold. I did the things I normally do, without any problems. I wasn't sad or upset or lonely, so although it wasn't one to rave about it was alright.

My Weekend








I thought I would take a break. I don't want to burn out at this too quickly. I have been sort of busy the past couple of days. I went to my grand daughter, Lexi's 4th birthday party yesterday. It was very nice. The party was held outside and the weather was lovely. There was a breeze but it wasn't windy like it was last year. We had 2 chocolate cakes with white icing, Neapolitan ice cream, several types of chips and drinks. We had games for the children and nice conversation for the adults and of course we were all playing with my other grand baby, Mary, who's 6 months old. We did have one mishap, a small elbow in one of cakes but it made for a good laugh, so it wasn't a problem. There were lots of great gifts for the birthday girl. All children should be so lucky. I have to say, Lexi is so good when it comes to presents, she loves them all and there is nothing that makes you feel as good as seeing genuine appreciation for a gift you've given. By the way, this is my first attempt at posting pictures, so please forgive the look of things until I get all this figured out.

I came home after the party and decide to fix a pan of cornbread for supper. I had heard about using ground flax seed as egg replacer in baking, so I decided to give it a try with the cornbread. I found a recipe on Food.com which was similar to my own cornbread recipe, except it is for a sweet version. I simply left out the sugar, salt and baking powder and used regular 2% milk instead of soy and used self rising cornmeal mix instead of the flour and cornmeal. I used the same amount of flax seed, water and oil. I did not boil the water and simmer the flax as directed. I simply microwaved the water for 2 minutes and stirred the flax in until it was of egg-like consistency. The flax mixture wasn't very appealing to look at but neither is raw egg if you ask me, lol. I mixed the milk with the flax seed mixture to make it easier to combine with the dry ingredients. Sorry, I forgot to get pictures. I also added a 1/2 cup more milk, because the batter was a lot thicker than my normal cornbread batter. I baked the cornbread in my preheated iron skillet, which is exclusively used for cornbread, using the recipe directions. I did need to add a few minutes to the baking time but that's normal with my oven. Let me just say the cornbread turned out perfectly. It didn't rise quite as high as the egg version but it smelled heavenly and tasted just as good. The inside was actually softer and the outside was crispy and delicious. I was very pleased with the results. One thing, I forgot to mention is that I always put the oil into the skillet while preheating it in the oven and then stir the hot oil into the batter prior to putting it into the hot skillet.

If you've never tried the ground flax before, you may have wondered what it is like. It is sort of like powdered nuts. It tastes sort of like pecans or walnuts. It has that little bitterness to it that you get sometimes with pecans but it's not something you really taste when mixed in small amounts with other foods. I sprinkle about a tsp full over my salad or in a bowl of cereal. There is a site called egglesscooking.com that tells a lot about using flax as egg replacement in baking. The recipes there call for less than the cornbread recipe on Food.com but the cornbread recipe was said be a blue ribbon recipe and I agree.

After supper we watched a movie, Iron Man 2. It was a very good movie. We loved the first one and I thought the sequel was just as good as the first, unlike a lot of movie sequels. Usually the sequel is a waste of time and money and even if it is not bad, it's almost never as good as the first. As much as we enjoyed the first Iron Man, I really expected this one to be good. I am so glad I wasn't disappointed. If you like this sort of movie, I do recommend it.

Sunday we went to Mom's for our Sunday dinner. We had a huge meal as usually. I always come away as stuffed as a Thanksgiving turkey. There was cubed steak and barbecued chicken, which I don't eat but everyone else did and there was mashed potatoes, mixed veggies, corn on the cob, salad, biscuits, and apple crisp. I had one of Morning Star Farms', barbecued riblets, which I love. It has the best barbecue sauce and it only takes a minute or two to fix in the microwave. Afterwards Mom and I went shopping a little and then back and had our dessert and a cup of coffee. I really needed the coffee. I have cut out my morning coffee recently and have done well, but today I had a splitting headache and Tylenol was not doing it's job. A nice hot cup of coffee fixed me right up. This has been a very good weekend despite my headache.
