Sunday With A Mexican Theme





The day started off good. I had been looking forward to breakfast, since the night before. I had already figured out what I was having and I knew it was going to be good. For breakfast, I had one of the pumpkin spice waffles with.....leftover apple crisp and.......warm peanut butter drizzled over the top. Ok, I know what your thinking, but it was really, really good. I think a little vanilla yogurt would have made it even better. I can wait to try some more combos. I have been looking for ways to spice up breakfast. I'm not really a breakfast person. I would like some healthy breakfast ideas. Please don't say oatmeal. I love oats, but I just can't do oatmeal; I want to, but I can't.





After breakfast we started getting ready to go to Mom's for dinner. Dinner is usually a combination of lunch and dinner, because it usually comes later than lunch and sooner than dinner and I usually eat too much. Today there was so much going on with getting everything ready and playing with the grand babies, OOPS, I totally forgot to take food photos. It didn't even dawn on me until we were getting ready to go home. We did get a few pictures before leaving and I got a few pictures of the leftovers. I can't believe I forgot. I did have a lot of fun with the babies though. It was a good day.

On the menu today we have....

Tacos with all the fixin's
Roasted chicken
Fiesta potatoes
Mexican Rice
Southwestern Salad
Apple cake
Fruit Salad
Autumn Mix (homemade)

 The Mexican rice (I don't remember the name of it actually). We took out the peas for the non-pea eater (my ds Lucas), before cooking.


This salad is soooo good, but it looks better before dressing. I think it is the spring mix lettuce, pico de gallo, corn, black beans, cheddar cheese, ranch dressing and tortilla chips.

  1. I thought the apple crisp looked good. I never thought of putting peanut butter on it. Sounds really good. I love the pictures of Lexi and the leaves. The picture you got of me was better. I didn't end up with a stupid look on my face. LOL.

  2. Thanks, I tried to get good pictures once I remember to take some. I wish the sun hadn't been in Lexi's face though.
