Multi Muffin Mix Recipe

Yesterday I baked some banana nut muffins using a multi muffin mix recipe. I love this recipe, because it is so versatile and the possibilities are endless. This is not a sweet sweet muffin, but no problem, if you like your muffins store bought sweet just add a little more sugar. I am trying to cut back on sugar and these were just perfect for me.

This recipe also makes savory muffins as well, just by decreasing the sugar and adding whatever savory ingredients you prefer. You can use all purpose or self-rising flour, oil or shortening, which ever you prefer or happen to have on hand. It's a make ahead mix you can store in a jar, etc. for those times when time is limited or you just don't feel like mixing and measuring. This recipe also includes suggestions for a variety of muffins including some that contain meat, since I live with and am surrounded by meat eaters, lol. Some I have made and some I haven't. I will be posting photos at the bottom as I make different versions. Enjoy!

 First we have the flour. I used all purpose, simply because I have baking powder that needs to be used.

Next I add the sugar, baking powder and salt.

I used a spoon mostly to cut the shortening into the flour, then used my fingers to sift through and break up any remaining large clumps.

It should resemble Bisquick once the shortening is combined. Now it's ready to be stored or used.

Here I had added walnuts for the Banana Nut muffins and a last minute addition of 1/2 tsp. of cinnamon, which I didn't get a shot of.
 If you are making the Banana Nut Muffins, 2 average bananas should be enough for 1 cup.

This is the wet mixture...milk, egg and the banana & vanilla, if making banana nut muffins. If using oil instead of shortening, add it to the wet ingredients, of course.

After mixing the wet and dry ingredients together, I got exactly 12 muffins, this time. Sometimes I get more or less depending on the ingredients added.

The muffins turned out perfectly. 
Banana Nut Muffins

Basic Muffin Mix (Makes 10 to 12 muffins.)
Ingredients
1 3/4 c All-purpose flour
1 Beaten egg
1/4 c Sugar
3/4 c Milk
2 1/2 tsp Baking powder
1/3 c shortening or cooking oil
3/4 tsp Salt

Instructions for Basic Muffin Mix
This is the basic muffin recipe and dozens of flavors can be added. Recipes follow: In large mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center . Combine egg, milk, and oil. Add egg mixture all at once to flour mixture. Stir just till moistened: batter should be lumpy. (You may need a splash more milk if using shortening) Spoon into greased or paper bake cup lined muffin cups, filling each about 2/3 full. Bake in 400 degree (F) oven for 18 to 22 minutes or till golden. Remove from pans: serve warm. (I baked mine at 375 for about 20 min., but ovens very so unless your oven runs hot, try the 400 degree and check 5 minute before the timer goes off.) 

Self rising muffins: Prepare Basic Muffin batter as above, EXCEPT substitute 1 3/4 cups self-rising flour for the all-purpose flour: omit baking powder and salt.
Blueberry Muffins: Prepare Basic Muffin batter as above. Combine 3/4 cup fresh or frozen blueberries, thawed, and 3 tablespoons additional sugar. Add 1 teaspoon finely shredded lemon peel, if desired. Carefully fold in batter.
 Note: The recipe originally called for only 2 Tbsp. of additional sugar, but I felt they needed just a little extra, so I increase the amount to 3 Tbsp. I also added 1Tbsp. of ground flax and 1/4 c. of old fashioned oats, which is optional. You can adjust the sugar to suite yourself.
Cranberry Muffins: Prepare Basic Muffin batter as above. Coarsely chop 1 cup fresh or frozen cranberries; combine with 1/4 cup additional sugar. Carefully fold into batter.
Apple-Raisin Muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 teaspoon ground cinnamon into the flour mixture. Carefully fold 1 cup chopped peeled apple and 1/3 cup raisins into batter.
Jelly Muffins: Prepare Basic Muffin batter as above. Spoon 1 teaspoon jelly atop batter in each muffin cup before baking.
Date-Nut Muffins: Prepare Basic Muffin batter as above. Fold 2.3 cup coarsely chopped pitted dates and 1/3 cup chopped walnut or pecans into the batter.
Garlic Cheese Muffins: Prepare Basic Muffin batter as above. EXCEPT decrease sugar to 1/8 cup, increase salt to 1 tsp. & milk to 1 cup if using shortening, stir in ½ - ¾ tsp. each black pepper & garlic powder, and add 1 cup shredded Swiss or Cheddar cheese to flour mixture. (I got 10 muffins when I made them.)
Ham n Cheese: Prepare Basic Muffin batter as above EXCEPT stir 1/2 cup finely chopped, fully cooked ham into the egg mixture. Stir 1/2 cup shredded cheese (2 ounces) and 1/2 teaspoon dry mustard into the flour mixture.
Bacon Muffins: Prepare Basic Muffin batter as above, EXCEPT cook 4 slices bacon till crisp; drain and crumble, reserving drippings. Combine bacon drippings with enough cooking oil to make 1/3 cup total mixture; use in place of the 1/3 cup cooking oil. Carefully fold bacon into batter.
Banana-Nut Muffins: Prepare Basic Muffin batter as above, EXCEPT decrease milk to 1/2 cup. Stir 1 cup mashed banana &1/2 tsp vanilla into wet ingredients and 1/2 cup chopped nuts & 1/2 tsp cinnamon into dry ingredients. Try 2/3 cup milk if using shortening.
Pumpkin Muffins: Prepare Basic Muffin batter as above, EXCEPT increase sugar to 1/3 cup. Add 1/2 cup canned pumpkin to the egg mixture. Stir 1/2 teaspoon each: ground cinnamon and ground nutmeg into flour mixture. Stir 1/2 cup raisins into batter.
Apple-and-Spice Muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 teaspoon ground cinnamon into flour mixture. Add 1 cup chopped, peeled apple with the egg mixture: stir just until moistened. Mix 2 tablespoons sugar and 1/2 teaspoon ground cinnamon; sprinkle mixture over muffins before baking.
Tropical Muffins: add 1 c. pineapple tidbits, drained, 1 tsp vanilla, ¼ c. each, chopped pecans and shredded coconut and 1 Tbsp sugar. Note: ¾ c. 2% milk worked well with this version. These taste almost like cake.
Banana Chocolate Chip Muffins: add 1 medium banana, mashed and ½ c. each chocolate chips and chopped pecans or walnuts plus 1-2 Tbsp. Sugar.
Apple-Cranberry muffins: Prepare Basic Muffin batter as above, EXCEPT stir 1/2 teaspoon ground cinnamon plus 1 Tbsp. sugar into the flour mixture. Mix in 1 cup chopped peeled apple, 1/3 cup dried cranberries, and ¼ cup chopped pecans. Increase milk to 1 cup if using shortening. 
Strawberry Oatmeal Muffins:Prepare basic muffin batter as above EXCEPT substitute ½ c. of oatmeal for ½ c. of flour, add 1 c. diced fresh strawberries, ¼ c. slivered almonds, and ½ tsp. of almond extract. This only made 10 muffins for me. You may try using all the flour plus the oatmeal. I also forgot the oil, but they turned out fine. Don't forget extra sugar for a sweeter muffin if you prefer. I would have sprinkled course granulated sugar on top if I'd had any.
Dry ingredients can be mixed ahead and stored in a jar, container, etc. I usually date it by the expiration date on the baking powder, flour whichever is sooner or flour if using self-rising.

Too Many Carbs

Today started off good (food wise). I got to bed early and although I was rudely awakened my the canine party going on in the dining room, I was up early. After letting the dogs out, I stayed up, even though I was not terribly happy about it. I hadn't slept long enough to figure out what was for breakfast. Normally by the time I wake up, I have it all figured out. I really had to think about it.

I had thought about making banana muffins, since I had 2 very ripe bananas that would not be eaten otherwise, but I was not really in the mood at that particular moment, to bake. I also had a very ripe nectarine that I had nearly forgotten about and since I had a nice thick, creamy cup of peach Chobani sittin' in the frig, that seemed to be calling my name, I went with the nectarine.

Peach Chobani Greek nonfat yogurt
Ground flax
Multi-Grain flakes
Kix
Cheerios (these are a great snack, not just for babies)
Very ripe nectarine
Chopped walnuts

Somehow I didn't get my Wii exercise in today. I had forgotten I would be keeping the girls this afternoon and I needed to child proof my house. I also needed to get a bath, bake the muffins, since I doubt the bananas would last much longer, fix lunch and do my normal housework before the girl got here.


Lunch was cut short, due to muffin baking and a rush to get my shower and so I just had a bowl of the mac & cheese with tomatoes, that I had for lunch yesterday.
 

 
I also had to have one of the babies, fresh from the oven. I've decide to do a separate post for these with pics and recipe tomorrow. I wanted to do a quick post tonight, since I got a late start and be able to get to bed early. How do you feel about me doing separate posts for all my recipes? Let me know.  I was hoping, it would be better for those who want to get straight to the recipe, when they click on the link from the recipe page. I don't know if I will be able to do it for all the recipes already posted though, since the title would have to change, but I will decide on that later.

Unfortunately I was too scatter brained to get any pictures of the girls today. I think being jarred awake this morning really messed me up. Well, lets just say, that's what did it.....
After the girls went home I was scrambling to get something fixed before Idol came on, not to mention I was sort of starving. I fixed a quick Birdseye Steamfresh pack of Lightly Sauced Penne Pasta & Vegetables w/ Alfredo Sauce and some frozen peas.

Very simply, but very good. It started out as something I was settling for, but really hit the spot, maybe because I was so hungry, either way it was good.

Yeah, this day started off good, but quickly turned into a carbolicious day. I'm not sure why, but some days just work out that way. I guess as long as it's not everyday, there's no since in beating myself up about it. Well, that's all folks. If you're up for some muffins, be sure and check back tomorrow. How To Make A Colorful Salad

Great morning! I went to bed early, got up early, bathed one of my dogs, put in a load of laundry, and then had breakfast. I also got some stretches in.

Waffle, fruit salad, walnuts, ground flax after pics.
Same breakfast, different day. I'm the only one here, eating the fruit salad from Sunday.
Still yummy.

Did my time on the Wii again. Fitness age today......38!! I'm finally getting a little better. After my Wii tennis session, I had lunch. I just knew this was going to be terrible looking, but I think it's the best looking meal of the day. I had macaroni & cheese with tomatoes and a salad with light Caesar dressing.
 The Salad....romaine, radicchio, cucumber, grape tomato, orange bell, mushroom & feta. This is what makes a colorful salad. I love colorful salads and using a variety of vegetables is definitely the way to make one. For other colorful salad ideas, I've posted links to some of my other salads at the bottom.
My favorite way to eat boxed macaroni & cheese.  I like homemade mac & cheese with broccoli and Worcestershire sauce.

While fixing dinner I had a pre-dinner snack, a forth of an apple, a couple of dried strawberries from The Fresh Market Strawberry Crunch and a little Sesame Nut Mix to cut the sweetness.


The Strawberry Crunch. A little too sweet by itself, the strawberries taste like strawberry preserves, but with some salty nuts and some fresh apple, not bad.

This also has golden raisins, dried cranberries, and sugar coated nuts, mostly peanuts.

Dinner took a while. I made steamed brown rice. My steamer is being a pain lately. The timer isn't working right. When the rice was finally done, I added some salsa and topped it with some Fiery Dessert Cheese (sort of like pepper jack) from Yoder's Amish Market. I also had some corn and steamed some green beans. It was just alright. It could have been better if I hadn't been in a hurry. I sort of just threw dinner together. I've been trying to get dinner done sooner, so that I can finish the blog and get to bed sooner. 

Not as pretty and colorful as lunch, but not bad. It was packin' some heat.
Well, another one finished early. I had an entirely "Go Me!" day. I hope you have too. Do you have a reason to say, "Go Me!? Well.....let's hear it!

Quick And Easy Food

Re-hydrating this morning with some SmartWater. Another waffle with fruit salad, but with walnuts this morning and the usual sprinkling of flax after pics. Gotta get my Omega 3's and fiber.




Lunch was modest, a frozen bean and cheese burrito with taco sauce & fresh carrot chunks. Loved the crunch of the carrots with my burrito.
 



No excitement today. It was a sunny, but not that warm, 55. It was also windy, not my favorite outdoor day, so I spent it inside. I didn't get up this morning feeling well rested, I wasn't, but I still felt pretty good. I did some laundry and picked up around the house, the usual cleaning. I didn't get any exercise done until after lunch. I played tennis again on the Wii. I think I'm getting better. I also did another fitness test. Today, my fitness age is 46, not bad, since I was 60 just yesterday. The best possible age is 20, that's about right, huh? I also did some upper body exercises with my 5lb. weights. I'm working on the muscles in my upper arms and back. No flags here.

Dinner was simple and easy, just a piece of Domino's cheese pizza from Sunday's dinner that got a little over heated, but still good and a salad with French dressing, which I forgot to get a photo of. Here I am, with my naked salad, again.

I got an early start tonight. So I'm wrapping this up. BTW, I lost that pound I found. Go me! I know, it's just a pound, but it's a start. You have to celebrate the small things sometimes. What would you like to celebrate?



Naked Food

The morning was about the same, but breakfast was a little different.


I had a frozen waffle with a big dollop of leftover fruit salad. It's probably better that it wasn't, but I would have loved a little larger waffle. It was filling, but just didn't look like much.
 
I sprinkled it with some chopped pecans and after the photos were taken I also sprinkled it with ground flax.


Before breakfast, I got in a few games of tennis on the Wii. I did the fitness test again. I did a little better today, but my fitness age is still 60. I did so well the first day, being 36. I'm not sure what happened, but I will just keep trying and hopefully, I will get better. I would love to find a game that involves more than just the upper body that doesn't cost a lot. Any suggestions?

For lunch I had leftover pizza. It was still pretty good even if it wasn't fresh made.


I had planned to have something different, but Lucas and I decide to watch a movie we'd gotten from Netflix and I wanted to fix something quick, since Lucas had already put the movie in. We received "Cop Out" a few days ago and had never gotten around to watching it. This move got a thumbs down, from both Lucas and myself. Lucas watched about the first 20 minutes and went back to his room. I watched a little longer, trying to give it a chance, but it was entirely too stupid for my taste. I like funny, but this was more than I could stand. So unless you like that sort of thing, I do not recommend this movie.



I decided to fix myself a snack since I'd just had a slice of pizza. I had Ants On A Log again. It may be a kiddie snack, but it's one I enjoy and it's not bad for you.
 

 Before dinner, we had a big storm with tornado warnings, high winds, hail and pouring rain. Luckily we escaped any damage and we got some much needed rain. After the storm was over, we went to the store to pick up a few things. I got a bag of romaine and some feta cheese for my salad and some of Oreida's new Sweet Potato Fries to have with it. I'd never tried Oreida's, but I love sweet potato fries.


I used the romaine along with grape tomatoes, cucumber, mushroom, orange bell pepper, feta and my French dressing. I also added a little flax after pics.

 The fries were great naked, they didn't need salt or anything. They tasted so good just as they were.
 I just had to get a shot of my salad naked too. I know there's a joke in there some where.....

Now as for that pound I lost, well, I found it. I knew it would be back, but I am hoping it won't stay long. I had a pretty good day today, despite finding my pound and being 60 two days after being 36. What's your favorite type of exercise, walking, dancing, yoga, etc. and why?
