Banana Yogurt Pancakes Recipe

This recipe was created because I wanted pancakes, but had no pancake mix or  milk. They were light and fluffy and turned out really well. I used vanilla yogurt instead of milk and you can sort of taste the vanilla yogurt in them, add a little butter and syrup and these are delicious.


Ingredients
2 Small-Med. Bananas, mashed
1 Cup Self Rising Flour
1 Cup Vanilla Yogurt
1 Egg, beaten
1/4 Cup water (if needed, depends on how this you like your batter)

Directions
Mix mashed bananas, egg, & yogurt together.
Add the banana mixture to the flour. The batter will be thick, which is why I added the water. I added 1/4 cup. It was still sort of a thick batter, but thin enough for pancakes.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour or scoop batter onto pan, using about 1/4 cup for each pancake.
Cook until pancakes are golden brown on both sides.


Makes about 7-8 average size pancakes.
