This is a recipe for roasted red skinned potatoes using a dip mix as seasoning. I used a dill dip mix, but there are other flavors that could probably be substituted. I also bought the Fiesta Ranch and Garden Green Onion flavors to try eventually. These turned out great and were voted a keeper by my son, husband and myself. I can't wait to try the other flavors.
Ingredients
2 1/2 - 3 lbs. Red Skinned Potatoes
1 Pkg. Hidden Valley Harvest Dill Dip Mix
1 T. Vegetable Oil
Cooking Spray (Pam, etc.)
Directions
- Preheat oven to 400 degree F.
- Wash potatoes and cut into chunks.
- Place potato chunks in a 1 gallon zip lock storage or freezer bag.
- Add one Tablespoon of vegetable oil to the bag of potatoes.
- Zip bag and shake to coat potatoes evenly with oil.
- Now add the pkg. of dip mix to the bag.
- Shake or massage the bag to distribute the seasoning evenly.
- Lightly spray the bottom of a 9x13 baking pan with cooking spray.
- Pour the potato mixture into the pan and spread out into a single layer.
- Bake in preheated oven approximately 1 hour - 1 hour 15 min. or until potatoes start to brown and are fork tender.
- Stir potatoes a couple of times throughout the baking time.
