A Yummy Asian Themed Dinner

After yesterday's zumba workout, I felt sure I would sleep like a rock. I was wrong. The muscles in my upper back were so tense, I had a hard time sleeping. I finally sat up in bed and massaged the back of my neck and as much of my upper back as I could reach. One of those Shiatsu massage things would have been great. Anyway, after massaging my neck and shoulders for a little while I finally work enough of the knots out, that I was able to get to sleep.

I also figured, I'd be sore this morning from all the moving we did, and again I was wrong, thankfully. We really did get a good workout. I was surprised when I woke up and felt great, except for having not slept well. I got straight up and started deciding what fruit should be saved from the compost. I have several things that aren't going to be edible much longer. The strawberries won, but mainly because I was craving cake and yogurt, unfortunately I'd gotten the Walmart (Great Value) brand of vanilla yogurt this time instead of the Food Lion brand. I was disappointed. The Walmart brand has a slightly grainy texture compared to the FL brand and it also tastes a bit sweeter than the FL brand as well. I also prefer FL light cream cheese, again, the Walmart brand has a slightly grainy texture. I'm not sure why, but it's noticeable for me. Aldi's also has really good light cream cheese, but I don't remember if they have the large containers of vanilla and if they do, whether or not I've tried it. I'll have to check it out.
Now back to breakfast. Ya gotta love cake for breakfast, lol.

Not bad, but the GV yogurt kind of ruined it.

I had leftover macaroni salad with fresh broccoli and carrots for lunch. It didn't look like much macaroni salad in the container, but it looks like quite a lot on this small luncheon plate, with the broccoli and carrot, I was quite full after lunch.


Later I had a snack, a Fuji Apple with peanut butter and honey. Normally I just go with PB, but I've had my honey for a while and I need to use it before it crystallizes. 

I had a handful of my mini everything bagels (pretzels), while I was putting dinner together.

I was going with an Asian these for dinner. I had some of Sunday's stir fry veggies with brown rice and a vegetable egg roll. I love these veggies with the edamame and I also like the egg roll. It is Tai Pei brand with no added msg in a whole grain wrapper. It crisps up nicely in the oven and come with a dipping sauce that's pretty good.

I added a little light soy sauce to the rice and veggies and this meal was perfect. If I hadn't been so full, I would have gotten seconds.
I am so excited about tomorrow. It is Zumba Thursday. If you don't get excited about exercise, you must not be doing Zumba. I wish I have known about it years ago, I might be in better shape, lol. I suppose I still need my yoga before bed, even after Zumba. My body doesn't know when to relax. Do you have trouble relaxing? What works for you?
